Gluten Free Puff Pastry! How Long Have I Waited For You?

If you are gluten free, have you ever wished that you could just walk into the grocery store and buy a puff pastry so you could make special treats at home? Wait no longer, because GeeFree has come to the rescue. They sent me samples of their products last week, and I have to tell you that I am impressed. As if the Puff Pastry Sheets are not enough, they also have Gluten Free Uncured Beef Franks in Puff Pastry (think pigs in blankets gluten free!), Spanokopita, Cheeseburger Balls, and a gluten free Chicken Pot Pie.

To use this gluten free puff pastry, take it out of the freezer and let it sit for 30 minutes. Prepare your work surface by sprinkling with gluten free flour. Roll it out to the desired thickness, then cut to the size and shape you want. Make Turnovers, tart shells, gallettes–whatever you can think up! I don’t think the gluten free community has had anything so versatile on the market before. I’ll show you my creations using the gluten free puff pastry tomorrow. 

These GeeFree Gluten Free Uncured Beef Franks in Puff Pastry were delicious. I had my own little party the night they arrived at my house. I cooked them, along with the Spanokopita, almost as soon as I took them out of the delivery box.

I cooked mine a little bit longer than the directions called for. They tasted really good, and would be a great addition to a cocktail or birthday party for a gluten free person.

The serving size is 2, and contains 100 calories and 8 grams of carbohydrates. If you are like me and you eat the entire package of 10, then you get 500 calories and 40 grams of carbohydrates, so please share them with someone.

Cheryl’s Desserts Love Struck Valentine’s Tower: Gluten Free Cookies in A Beautiful Package

If you eat a gluten free diet, then you know how hard it is to find gluten free treats that are nice enough, and taste good enough, to send as gift to someone you love. Well, let me tell you about Cheryl’s Desserts.  Not all of the cookies they sell are gluten free, but they do have a wide assortment of gluten free cookies from which to choose. The ones they sent me were packaged in very pretty boxes, that I plan to keep and use for storage in my sewing room.

The cookies inside of the boxes were all individually wrapped, so each one was as fresh as the first one. Fabgrandpa ate the brownies, and had no idea they were gluten free. They were THAT good. Cheryl’s Desserts knows how to do brownies for sure.

I did snag one bite of one of the brownies, and from that one bite, I could tell they were so very chocolately and chewy and fudgey. I may have to buy another tower just so I can eat a whole one. I’m just glad Fabgrandpa liked them.

Snickerdoodles are one of my favorite cookies, and these were very good. They were soft and sprinkled with sugar and spice. The Brownie Walnut Cookies were very chocolatey with just a bit of chopped walnuts in them.

The biggest box on the bottom of the tower had my favorite cookies of them all in it. The Buttercream Frosted Sugar Cookies were so flavorful, with a crisp-chewy cookie spread generously with buttercream frosting. I know I will have some explaining to do to my endocrinologist but I just couldn’t help myself. So good! The Chocolate Chip cookies were just as good as gluten full chocolate chip cookies I have tasted. Really, you will not go wrong sending this gluten free cookie assortment to your sweetheart. The Love Struck Tower retails for $49.99.

Three Bakers Gluten Free Bread Review

The people over at Three Bakers Gluten Free Bakery asked me if I would like to try some of their bread. Of course, I said yes. I am always ready to try out a new brand of bread. They sent me three loaves of their great bread.  Three Bakers was founded in 2008, and exclusively bakes gluten free bread products.

The first one I tried was their Great Seed Whole Grain and & Seed Bread. This bread was sooo good! It has Sunflower Seeds, Sesame Seeds, Chia Seeds, Millet Seeds, Hulled Hemp Seeds, Flax Seeds, Pumpkin Seeds. It was very flavorful and nutty tasting. Toasting it enhanced the nutty flavor. I enjoyed this bread made into sandwiches; toasted with butter; and untoasted with peanut butter. I did take several photos to show how many seeds this bread had in it. However, when my computer crashed a month or so ago, I lost them. I didn’t have any of the bread left to take more pictures, so you’ll just have to trust me when I tell you that it was chock full of seeds and grains.

In addition to several varieties of whole grain gluten free breads, Three Bakers Bakery also produces hamburger and hotdog buns; Hoagie Rolls; three varieties of frozen gluten free pizzas; pizza crusts; and stuffing mix. Ohm my goodness. I had a lot of fun with my box of goodies from Glutino this month. I decided to make a Gluten Free Decadent Chocolate Raspberry Cake to have on hand for deserts this week.

It was very simple and easy to make, but it looks like it took hours. It really is pretty enough to take to a party or a pot luck, too. Fabgrandpa asked me more than once, “Are you sure this is gluten free?”

Here’s how to make this cake:

Gluten Free Decadent Chocolate Raspberry Cake Recipe

1 box Glutino Decadent Chocolate Cake Mix

5 Tbls softened butter or margarine

2 eggs

1/2 tsp gluten free vanilla extract

1 cup sour cream

1 can (12 oz.) Solo Raspberry Cake & Pie Filling

1 pint whipping cream

1 tsp vanilla extract

1/3 cup sugar or Splenda

Using an electric mixer, beat the butter or margarine until light and fluffy. Add in the entire box of cake mix. Beat until it resembles crumbs. Add the eggs and vanilla, and beat until mixed well. Add in the sour cream and beat three minutes more.

Spray an 8″ or 9″ round cake pan lightly with oil. Pour the cake batter in the cake pan. Bake in preheated 350° oven for 40 minutes. Remove cake from oven and let cool completely. I cooled mine overnight.

Remove cake from pan and place on a cutting board. Using a piece of string or thread, cut the cake into two layers. (Place the string on the side of the cake farthest from you, and pull gently until the string comes out on the side next to you. You will have two level layers.)

To prepare the whipping cream, pour the cream into a large mixer bowl. Add 1 teaspoon vanilla extract. Beat on high for 3-5 minutes, until slightly thickened. Add the 1/3 cup of sugar or Splenda. Beat until thick and spreadable.

Place one of the cake layers on a cake plate. Spread with Raspberry Cake & Pie Filling. Spread half of the whipped cream over the raspberry filling. Top with the second layer. Spread with remaining raspberry filling, then with the remaining whipped cream.  Keep this cake in the refrigerator until ready to serve.

Cedar Lane Natural Foods Review

Cedar Lane Natural Foods has been in business for more than 30 years. They have created a wide variety of delicious foods using only the best ingredients.

I had been asked to review the breakfast products in their line, but I was not able to find them in any of the grocery stores in my area. The breakfast selections include Green Chile, Cheese & Ranchero Sauce Egg White Omelette; Garden Vegetable & Mozzarella Egg White Omelette; Uncured Turkey Bacon Egg White Omelette; Spinache and Mushroom Egg White Omelette; Spinache and Roasted Tomato Egg White Frittata; and Roasted Chile and Cheese Egg White Frittata. All of the breakfast products look like they would be very tasty.

While I was disappointed that we were not able to try the egg white products, we did find a few of the dinner meals. We tried the Eggplant Parmesan, the Baked Stacked Eggplant, and the Roasted Chile Relleno.

Eggplant Parmesan is one of my favorite meals. I have made it many times at home, and have ordered it at restaurants. This frozen vegetarian version of Eggplant Parmesan is very, very good. Fabgrandpa, who is not a gluten free guy, and who is kind of picky about frozen meals, loved this. We have purchased it several times already since we used the coupons we were given to try Cedar Lane’s products. It is easy to prepare, just six minutes in the microwave and it’s ready. You can serve it right in the paper bowl it comes it, so clean up is a breeze, too. The only thing about the product that would be a drawback to someone is that once it is cooked, it doesn’t look much like the picture on the box, but most frozen meals don’t:

The Chile Relleno was delicious. I loved it, and I usually don’t eat it even when we go out to a Mexican restaurant. There are several more varieties that we want to try. I am looking forward to trying some of the four varieties of Tamales; the Enchiladas, and the Lasagna. I keep looking for more of the varieties in the stores near me, but I live out in a very rural area where there is just not much variety available to purchase.

Schar Gluten Free Pizza Crusts

logo-webI haven’t tried many products from Schär,  but the ones I have tried tasted really good. When they asked me to try some of their Gluten Free Pizza Crusts, I said ok.

pizza crustThe Schär Pizza Crusts come packaged in vacuumed packed plastic, with two in a box. They are big enough for two people to eat for lunch. They are ready to add toppings and pop into the oven when you take them out of the package.

Both Fabgrandpa and I enjoyed these pizza crusts. He is not easy to please with gluten free foods, since he is not a gluten free person. However, when he does like something he lets me know. These crusts had a yeasty, real pizza crust taste. They were soft before cooking, and still a soft and chewy after. They didn’t get too hard to eat, which can happen with other gluten free pizza crusts. They also help up to the toppings I used, which  made me very happy.

A lot of the time when I make a pizza at home, I stop off at my local grocery store, and go to the Olive Bar they have near the deli. I get a 8 oz cup of a mixture of selections off that bar. I usually get two or three different kinds of olives, some marinated cherry tomatoes and mozzarella balls, some roasted garlic, and whatever else looks good to me that day. That is what I did for making this pizza.

Because this pizza uses some ready to use ingredients from the grocery store, it is a snap to prepare, and tastes really good. You can change it up every time you make it, just by varying the items you get from the Olive Bar.

Karen’s Home Made Gluten Free Pizza Supreme

1 package Schär Gluten Free Pizza Crusts

1/3 jar of your favorite spaghetti sauce or marinara sauce

1 (8 oz) container of assorted items from Olive Bar from your deli

2 sweet Italian sausage links

1/2 red bell pepper

1 small onion

1/2 cup grated mozzarella cheese

Take the pizza crusts out of the package, and place on a aluminum foil lined baking sheet or pizza pan. Spread half of the spaghetti sauce over each crust. Cut up the olives, tomatoes, and fresh mozzarella balls and spread half on each crust.

Remove the skins from the Italian sausages, dice them up, and cook in a skillet until browned. Drain grease, and spread half of cooked sausage over each crust. Julienne slice the red bell pepper and onion. Place half on each crust. Sprinkle 1/4 cup grated mozzarella on each pizza. Bake in a pre-heated 400° oven for 12-15 minutes.

These bars are made with peanut butter, almond butter, honey, and other natural fruits and ingredients. My favorite was the Cranberry Crunch:

The Cranberry Crunch Perfect Bar was delicious. It tasted fresh. Because I have dentures, it is difficult for me to eat nutrition bars that have nuts in them. These are made with nut butter, so there was no problem with that!

The Cranberry Crunch Perfect bar has 200 calories, and 19 grams of carbohydrate, so it makes a good breakfast on the go or midafternoon snack for someone with diabetes.
