I am a disabled Grandma, living almost fifty miles from my closest grandchildren. But, luckily for me, my next door neighbors have four children. The oldest one is Abbey. She is sixteen years old, and is a Junior in high school this year, and makes excellent grades. She is on the track team, throwing discus for an impressive record. In her Sophomore year, she ranked 9th in the state of Georgia in Discus. I think that is wonderful!

In addition to making good grades and participating in sports at school, Abbey comes over on Mondays to help me do things around my house that I am unable to do. She helps me load up boxes into my car (we order things online frequently) to take to the dump. She helps me plant things in my tiny garden. She helped me clean out my lower cabinets and put down new paper linings after a mouse decided to make his home there. She is a super kid, and I love her like one of my own grandchildren.

On this day, I had decided to introduce Abbey to Caprese Salad. Problem is, Irma decided to visit us here in west Georgia. When I went to the grocery store to buy the ingredients I would need, they were out of fresh mozzarella cheese! None to be found in the store! Ok, then, I made a quick decision to just make some tomato sandwiches because I had some nice tomatoes from the produce stand in town. Guess what? There was no bread to be found in the store! I went ahead and grabbed the Coca-Cola™Mini Cans and headed home. These 7.5 ounce mini cans are just the right size for an after school snack.

When I got home, I made a loaf of gluten free bread in my bread machine. It turned out great, and was a good choice for a crusty, healthy tomato sandwich for after school. While the bread was baking, I texted Abbey, and asked her to come over. She said her family had decided to go to her grandmother’s house for safety because they live in a mobile home, and Irma was approaching us bringing high winds, rain, and possible tornadoes. While I was so glad she would be in a safer place during this weather event, I was sad that she couldn’t come over.

To make your tomato sandwich, get some tomatoes at a produce market or farm store. They are the tastiest and the freshest. Wash and slice them about a half inch thick. Spread mayonnaise on toasted bread. Place a couple slices of tomato on the bread. I like to add fresh ground pepper to mine, and a shake of salt.

These sandwiches are so delicious. They are the perfect accompaniment for an ice cold glass of Coca-Cola. The 7.5 ounce mini cans of Coca-Cola only have 90 calories in the whole can, so you can drink the entire can!

Pour those Coca-Cola Mini Cans over ice, or refrigerate and drink straight from the can. So good ice cold, and it is the perfect drink to go with that fresh tomato sandwich. This after school snack won’t spoil your appetite for dinner, but it will hit the spot and is perfect for after school.
