I love Chex Cereals. Before I started eating a gluten free diet, Corn Chex and Rice Chex were two of my favorite cereals. Then, after I became a gluten free eater, Rice Chex was a staple breakfast food around here. I was so excited when they came out with the Cinnamon and Chocolate Chex cereals, and love that they are all gluten free. So, whenever the holidays come around, it is not unusual to see a bowl or bag of some kind of party mix or trail mix as a part of my holiday party menu.
Chex Cereals from General Mills makes it so easy to put together a party mix. They have tons of recipes, and I’m sure one of them will be just the right one for you. The Gluten Free Snickerdoodle Chex Mix recipe looks so yummy to me! And the good part of it is, even people who don’t eat gluten free will love it!
Even though the Chex website has lots of recipes, I wanted to create my own recipe, because I had some specific ideas about what I wanted in it. Because I was making it to give as little gifts to neighbors, friends, my grandchildren and my adult children, I wanted it to look festive. I also wanted it to have some chocolate, peppermint, and some “nuts and berries” in it. So, I’m sharing my recipe for my chocolatey, minty, “healthy” trail mix with you.
- 12.8 oz box Chocolate Chex
- 1 cup roasted pepitas (pumpkin seeds)
- 10 oz pkg Publix Dried Cranberries
- 1 cup white chocolate chips
- 6 oz pkg Publix Pecan Halves
- 1 oz pkg Crunchies Freeze Dried Raspberries
- 10 0z peppermint bark, chopped
- Pour all ingredients into a very large bowl. Mix well. Serve in the bowl at a party, or place one or two cups in Ziploc bags to give as gifts. This mix travels well if you have to send packages through the mail.
In no time at all, I have 16 cups of party mix to give away as gifts. These little Ziploc bags of goodness are perfect for the mailman, the UPS driver, the trash man, the kids next door–really for anyone with whom you want to share a little holiday cheer!
