
I have been wanting to make some stuffed mushrooms for quite some time, but have never had all the ingredients in the kitchen at the same time. Then one day, UPS delivered a box of goodies from Glutino, and there was a package of Glutino Gluten Free Bread Crumbs in there. I got to work on this recipe the next day.

Here is my recipe. It makes six large stuffed mushrooms or 8 medium ones. Scroll all the way down for a giveaway for Glutino!
Crab and Bleu Cheese Stuffed Mushrooms
6 large mushrooms or 8 medium mushrooms
2 Tablespoons melted butter
6 slices bacon
1 (4 oz) can crab meat, drained
1/3 cup Fromager d’Affinois Bleu Cheese
1/3 cup shredded mozzarella cheese
1/3 cup Glutino Gluten Free Bread Crumbs
1 teaspoon Old Bay Seafood Seasoning
Cut the stems out of the mushroom caps. Melt the butter, and use a basting brush to brush butter on the inside and outside of the mushrooms. Place them cut side down on a cookie sheet, and bake in a preheated 400° oven for 10 minutes. While mushrooms are baking, cook the bacon in a skillet until crisp and browned. Set aside.
Mix together the crab meat, bread crumbs, Old Bay seasoning, and mozzarella cheese. Dice the bleu cheese into tiny pieces, and stir into the crab meat mixture. Crumble the bacon, and stir into the crabmeat-cheese mixture.
Generously fill each mushroom with the crabmeat-cheese mixture, and place on cookie sheet. Bake in 400° oven for ten minutes. Let cool for a few minutes and serve warm.

I served mine with rib eye steak and a salad. What will you serve your’s with? Oh, and they are just as delicious all by themselves, for a cocktail party or just as an appetizer.

You could use salmon or chopped shrimp, or if you don’t care for seafood at all, try substituting cooked italian sausage. Or, make it with veggies like chopped onion, bell pepper, and celery.
