Starting today, Target and Green Giant Fresh are getting together to bring you Green Giant Klondike Potatoes and Asparagus! You can get the asparagus free when you buy a 5 pound bag of potatoes! What could be better than that? Get your coupon here!

Now, what are you going to make with those potatoes? Fabgrandpa and I love one dish meals, because I like the ease of having everything in one pan, and he washes the dishes! One pan means he gets done faster. Here is a good one pan meal we made using our Green Giant Fresh Klondike Potatoes and Asparagus:

Chicken, Potatoes, & Asparagus one dish meal

Gluten Free Chicken, Potatoes and Asparagus

Ingredients:

4 chicken thighs, deboned and cut into bite size pieces

3 or 4 potatoes, diced or sliced

8 ounces fresh asparagus, cut into one inch pieces

4-6 cloves of garlic, sliced

1 sprig of fresh basil and 1/4 teaspoon dried basil

salt and pepper to taste

1/4 cup olive oil

1/2 cup white wine, optional

Directions:

Heat the olive oil in a large skillet with a lid. Add the chicken, garlic, basil, salt and pepper, and sautee“ for about 5 minutes on medium heat. Add potatoes and wine, if you are using it, and stir to coat the potatoes. Cover and cook about five minutes. Add the asparagus, stir to mix well, cover, and cook about twenty minutes more until the potatoes are tender. If you like your asparagus crispier, add them about 5-6 minutes before cooking is completed.

Mmm, this sounds like my kind of meal — one pot dishes are the best! I would probably try roastign my potatoes and asparagus with some fresh herbs and olive oil!

This would have been very good if the instructions were clear on how high to turn the eye of the stove. I had it near high whereas it should have been on medium. Also stir it often to prevent sticking and burning. I’m gonna try it again some time with those corrections.

I love using chicken thighs because they have so much flavor. I want to make this gluten free recipe. It looks so delicious!
