Making my own mayonaise with Tropical Traditions Coconut Oil

A couple of months ago, Tropical Traditions sent me a jar of their Virgin Coconut Oil to review. I have only ever used coconut oil to make soap, never to cook with or to make something to eat. But, I have been wanting to get into making my own salad dressings and mayonaise for quite some time, so I decided to use some of the coconut oil to make mayonaise today.

First, I had to find a recipe. I used this one. Second, I had planned to take pictures of the step by step, but it was so dang easy and quick that it seemed ridiculous to do that. I mean, really. Crack eggs, separate the yolks from the whites, put all the ingredients except the oil in the blender, put the top on. Take out the little lid on top so you can slowly pour in the oil while you blend, and in five minutes or less, mayonaise! The only thing I did different from that recipe is that I use lime juice instead of lemon juice, because I did not have a lemon.

Y’all, I could not believe how thick this mayonaise ended up. It is very good. I won’t say I will never buy another jar of commercially made mayo, but I am going to try my best not to, because I don’t want EDTA in my food anymore. Or MSG.
