My friends over at Simply Potatoes sent me a coupon to try another variety of their product to review.  This time, I chose the Diced Potatoes with Onions. Besides making a good side dish all by themselves, they are great in a Sausage Potato Skillet Breakfast. In fact, this breakfast dish is so hearty and quick, you could serve it for dinner before you go to soccer or T-ball practice this spring!

Gluten Free Sausage and Potato Skillet Breakfast Recipe

1/2 package of smoked sausage such as Eckrich or 4 individual smoked sausages, diced

1 cup of Simply Potatoes Diced Potatoes with Onions

1/3 cup shredded cheese, your choice of flavor

3 eggs, beaten

3 tablespoons butter or margarine

Cook the Simply Potatoes Diced Potatoes with Onions covered, in the microwave for 4 minutes. Melt the butter or margarine in a medium skillet. Add potatoes and sautee for three minutes. Add the smoked sausage and cook five minutes more.

Cook potatoes and sausage together for about five minutes

I make the same basic recipe as the one you made using regular fresh potatoes. I just don’t add meat, but I do add a few chopped green onions for a little extra kick. The Simply Potatoes would sure speed up the cooking time!
