
I finally went back to work. And because my schedule for the first two weeks includes a lot of closing shifts, where I don’t get off until 7:30 p.m., I shopped for groceries with Fabgrandpa cooking meals in mind. One of the things I picked up was a bag of Simply Potatoes with a coupon for a free bag that they sent me to try them.

Yesterday as I was getting ready for work, Fabgrandpa asked me what was for dinner. I told him I was going to make Red Potatoes and Smoked Sausage when I got home. He asked me how to make it, so I told him how to do it. When I got home from work, dinner was ready. This recipe is soooo easy!

Simply Potatoes Red Potato Wedges and Smoked Sausage Recipe
1 bag Simply Potatoes Red Potato Wedges
1 pkg smoked sausage
1 teaspoon minced garlic
salt and pepper to taste
olive oil spray
Spray a ” X 13″ casserole dish with olive oil spray. Open the bag of potato wedges and pour into the dish. Cut the smoked sausage into 1/2 inch slices, and put the in the dish with the potatoes. Sprinkle the minced garlic, salt and pepper over all, stir once or twice to combine, and bake in a 350° oven for 1 hour.
We served this with a side of green beans. So yum, and so easy!

I would make something similar to what you did with smoked sausage but also has carrots, onions, celery, and broccoli in it as well.
Glad to know you are well enough to be back at work. I have been following your recovery as my husband had an ilieostomy 16 years ago and does well with it. So your post on your stoma was well done and very informational for people.

They have a recipe for Southwest-Style Potato Pancakes that I modify (it needs spice so I add jalapeno peppers to mine). Now my mouth is watering!

It never occured to me, for some reason, to use Simply Potatoes for potato salad. Then I saw their recipe for Classic Potato Salad. I will make that recipe, if I win, or even if I do not!
The Cheesy Potatoes look good… but I prefer their southwest hash browns cooked right out of the bag! We eat them regularly, and have tried other varieties as well.
