Ok, so that may look like a strange combination, but it is good. The back story is that my refrigerator is on the fritz AGAIN, and I had to use up some nectarines and a gluten free pie crust I had in there. There weren’t enough nectarines to make the pie, so I added a can of pears. What is that they say about necessity being the mother of invention…
3 nectarines, peeled and sliced
1 (16oz) can pear slices
1 tsp cinnamon
2 Tbls cornstarch
1/4 stick of butter or margarine
1/4 teaspoon salt
Your favorite gluten free pie crust mix
Mix the nectarines, pears, cinnamon, cornstarch, butter and salt together in a bowl. Roll out one part of the pie crust between two pieces of plastic wrap that has been sprinkled with cornstarch. Place it in the pie plate. Pour in the fruit mixture. Roll out the second part of the pie crust, and place on top of the fruit. Cut a couple of slits in the top crust. Bake at 400 degrees for 45 minutes. Serve warm or cold, and be prepared to moan in delight!
