Simply Potatoes Recipe and Giveaway!

My friends over at Simply Potatoes sent me a coupon to try another variety of their product to review.  This time, I chose the Diced Potatoes with Onions. Besides making a good side dish all by themselves, they are great in a Sausage Potato Skillet Breakfast. In fact, this breakfast dish is so hearty and quick, you could serve it for dinner before you go to soccer or T-ball practice this spring!

Gluten Free Sausage and Potato Skillet Breakfast Recipe

1/2 package of smoked sausage such as Eckrich or 4 individual smoked sausages, diced

1 cup of Simply Potatoes Diced Potatoes with Onions

1/3 cup shredded cheese, your choice of flavor

3 eggs, beaten

3 tablespoons butter or margarine

Cook the Simply Potatoes Diced Potatoes with Onions covered, in the microwave for 4 minutes. Melt the butter or margarine in a medium skillet. Add potatoes and sautee for three minutes. Add the smoked sausage and cook five minutes more.

Pour beaten eggs over the potato and sausage mixture, and stir once or twice to make sure the eggs cover the mix. Sprinkle cheese over the top of the egg mixture.

Cover the skillet with a lid and cook for three to five minutes on low heat, until eggs are done to your taste. Makes four servings.
