…the winner is: Caprese Toast!

Caprese Toast

I saw these Udi’s Gluten Free Hot Dog buns in the grocery store a couple of weeks ago, so I bought them, even though I don’t like hot dogs. I figured I would be able to use them for something anyway. Today I was making an Italian dish for dinner, so I decided to make this appetizer:

 

Gluten Free Caprese Toast

1 container fresh mozzarella cheese

3 roma tomatoes, peeled and diced

1 bunch of fresh basil, chopped

1/ cup olive oil

salt and pepper to taste

2 Udi’s Gluten Free Hot Dog Buns

Mix the first 5 ingredients together well, and refrigerate for several hours to overnight.  When ready to serve, cut the hot dog buns in four pieces lengthwise. (Cut each half of the hot dog bun in half.)  Place the pieces of hot dog bun in the toaster, and toast to golden brown.

Put the slices of hot dog bun on a plate, and spoon some of the caprese salad over each piece. Serve immediately.

This makes an excellent appetizer for an Italian meal, or for a party.
