I finally went back to work. And because my schedule for the first two weeks includes a lot of closing shifts, where I don’t get off until 7:30 p.m., I shopped for groceries with Fabgrandpa cooking meals in mind. One of the things I picked up was a bag of Simply Potatoes with a coupon for a free bag that they sent me to try them.
Yesterday as I was getting ready for work, Fabgrandpa asked me what was for dinner. I told him I was going to make Red Potatoes and Smoked Sausage when I got home. He asked me how to make it, so I told him how to do it. When I got home from work, dinner was ready. This recipe is soooo easy!
Simply Potatoes Red Potato Wedges and Smoked Sausage Recipe
1 bag Simply Potatoes Red Potato Wedges
1 pkg smoked sausage
1 teaspoon minced garlic
salt and pepper to taste
olive oil spray
Spray a ” X 13″ casserole dish with olive oil spray. Open the bag of potato wedges and pour into the dish. Cut the smoked sausage into 1/2 inch slices, and put the in the dish with the potatoes. Sprinkle the minced garlic, salt and pepper over all, stir once or twice to combine, and bake in a 350° oven for 1 hour.
We served this with a side of green beans. So yum, and so easy!
